Milk and honey

and eggs and oatmeal and oil baked together makes a great breathing day breakfast. Today I monkeyed around with the recipe, taking out some of the oil and all the sugar, adding apple juice concentrate and honey to taste. Not the same decadence as the original recipe, a little more crumbly in consistency, but yummy just the same.

Here’s the recipe I received
(years ago at one of my bridal showers in RI – not sure if this is a native New England recipe or where it comes from…)

Baked Oatmeal

mix together
3/4 cup oil
1 1/2 cups sugar
3 eggs

then add
4 1/2 cups oatmeal
3/4 T. baking powder
1 1/2 cups milk

Bake at 350 degrees for 45 minutes in an 8 x 8 greased pan

I mix it together then go for a run or get the girls up – it’s great to have breakfast ready to eat – the girls like it too! A little luxury on a lazy day.

    You’re telling me a lazy day is a day in which you bake something for 45 minutes before the others are up and go for a run??? THAT DOES NOT QUALIFY AS LAZY TO ME. You don’t know how to be lazy. Lazy is staying in bed when you oughtn’t and having things brought to you by a slave. (!) If you’re lazy, there isn’t a word for me.

    I love the sound of your breakfast though and would love to try it. Maybe tomorrow. It won’t be a lazy day though. It’ll be an adventurous breakfast for me…usually everyone gets themselves some cold cereal. They live. I’m not saying I’ve never baked something for breakfast, but I think it’s special work when I do!
